With a water mist extinguisher; most of the droplets evaporate above the fat creating a cooling ‘blanket’ reducing the oxygen from the surface and preventing re-ignition. That is why our water mist extinguishers are suited to fight small F-Class fires such as on shallow frying pans and domestic deep fat fryers (typically 2 to 3 litres). On larger fat and cooking oil fires, such as commercial deep fat fryers, there is a larger surface area burning and a much larger volume of oil to cool, which may still be disturbed by the instant evaporation of the water mist droplets; for this reason, we recommend a wet chemical extinguisher for fires above a 5F rating.
